Superfood Pesto Pasta
We love this pesto recipe because it’s dairy-free and packed with superfoods.
Superfood Pesto Pasta
Yield: 2 Cups

INGREDIENTS
- 2 packed cups fresh basil leaves
- 2 handfuls kale or spinach
- 1/3 cup cashews
- 2 tablespoons hemp seeds
- Juice of one large lemon
- 1 large clove of garlic
- 3 tablespoons nutritional yeast
- 2 tablespoons olive oil
- 2-3 tablespoons water
- Roasted veggies of choice: zucchini, grape tomatoes, bell peppers
- Gluten free pasta or zucchini noodles
INSTRUCTIONS
- Add the basil, spinach/kale, cashews, hemp seeds, lemon juice, garlic, nutritional yeast, olive oil and salt to a food processor or small blender. Blend until a thick paste forms. Drizzle in water as necessary until evenly combined, but not completely smooth.
- Taste and adjust flavors as desired.
- Add pesto sauce to cooked pasta with roasted veggies and toss until well combined.
