Turmeric Almond Energy Balls
INGREDIENTS:
2 cups raw almonds, soaked for 15 min
2 cups soft Medjool dates, pitted
1 tablespoon chia seeds + more for garnish
2 tablespoons raw honey
2 tablespoons lemon zest
1 tablespoon turmeric
1 tablespoon coconut oil
1 teaspoon sea salt
3-5 grinds of fresh black pepper
INSTRUCTIONS:
Soak almonds in filtered water for 15 minutes, rinse and air or towel dry.
Place almonds into a food processor and pulse into a crumbly texture.
Add dry ingredients and process to combine.
Add dates plus remaining wet ingredients and process until desired consistency is reached.
Measure out 1 tablespoon of the mixture and roll into a ball. Dust tops of energy balls with chia seeds.
Refrigerate until firm or freeze for longer storage.
