Sunbutter And Jelly Energy Balls
INGREDIENTS:
2 cups raw cashews
1 cup soft Medjool dates, pitted
1 heaping tablespoon Sunbutter
1 teaspoon vanilla extract
1 teaspoon sea salt
1 tablespoon Strength of Samson
1/2 cup raw sunflower seeds
1/2 cup dried blueberries
INSTRUCTIONS:
Place all ingredients into a food processor, (reserve sunflower seeds and dried blueberries for later use). Pulse mixture into a crumbly texture. Then, continue to process until a smooth consistency is reached.
Add the sunflower seeds and blueberries into the mixture and pulse a few times to combine, leaving the berries and seeds mostly intact.
Measure out 1 tablespoon of the mixture and roll into a ball.
Refrigerate until firm or freeze for longer storage.
