Sunbutter And Jelly Energy Balls
INGREDIENTS:
- 2 cups raw cashews 
- 1 cup soft Medjool dates, pitted 
- 1 heaping tablespoon Sunbutter 
- 1 teaspoon vanilla extract 
- 1 teaspoon sea salt 
- 1 tablespoon Strength of Samson 
- 1/2 cup raw sunflower seeds 
- 1/2 cup dried blueberries 
INSTRUCTIONS:
- Place all ingredients into a food processor, (reserve sunflower seeds and dried blueberries for later use). Pulse mixture into a crumbly texture. Then, continue to process until a smooth consistency is reached. 
- Add the sunflower seeds and blueberries into the mixture and pulse a few times to combine, leaving the berries and seeds mostly intact. 
- Measure out 1 tablespoon of the mixture and roll into a ball. 
- Refrigerate until firm or freeze for longer storage.
