Dairy-Free Spinach & Veggie Dip
TIME: 20 MIN | YIELD: 6 CUPS
INGREDIENTS:
1 (10 ounce) package frozen, chopped spinach (defrosted and squeezed dry)
2 cups Vegenaise (soy-free) or Homemade Mayonnaise
2 cups Homemade Cashew Sour Cream
1 (3 oz) package of dried vegetable soup mix (find in bulk section of natural grocery store)
1 can water chestnuts, drained and chopped
3 green onions, chopped
ADDITIONAL SEASONINGS IF SOUP MIX IS SALT AND SEASONING FREE:
2 teaspoons sea salt
1 teaspoon white pepper
1 teaspoon garlic powder
1 teaspoon onion powder
INSTRUCTIONS:
Defrost spinach and place in either cheesecloth or paper towel. Wring out as much liquid as possible.
Combine spinach with all remaining ingredients and let set in refrigerator for 2 hours.
After chilling, adjust consistency if needed by adding additional Vegenaise/Homemade Mayo or additional seasonings to your preference.
May serve cold or best warmed in oven and paired with a platter of your favorite vegetables, homemade bread, or flax crackers.
