Pumpkin Spice Milk
This is a wonderful drink to enjoy as we begin to enter into the fall. It’s satisfying, comforting, and so yummy!
TIME: 10 MINUTES | YEILD: 6 CUPS
INGREDIENTS:
2 cups raw pumpkin seeds, soaked and drained
6 cups water
1/4 teaspoon sea salt
2 teaspoons vanilla extract
1 teaspoon pumpkin spice
INSTRUCTIONS:
Place pumpkin seeds in a glass bowl, add a pinch of sea salt and cover with water. Let the seeds soak at room temperature for at least 6 hours or overnight.
Drain and rinse the pumpkin seeds and place in the blender. Add water and blend for 1-2 minutes until smooth.
Pour through a nut milk bag or cheesecloth and squeeze out the milk from the pulp.
Pour pumpkin milk back into the blender and add remaining ingredients, adjusting sweetness to desired taste.
Refrigerate for 1 hour and enjoy.
Store in the fridge and consume within 3 days.
