Cream of Broccoli Soup
We love eating clean soups! Most soup you buy at the store or in a restaurant is loaded with cream, sugar, and condensed milks. Here is a fun alternative to your standard cream of broccoli soup that is made entirely from vegetables! Enjoy it as is or use it in your favorite recipe calling for creamed soup.
INGREDIENTS:
2 medium onions (chopped)
2 cloves garlic (minced)
2 tablespoons olive oil
1 tablespoon thyme
1 tablespoon oregano
1 large head of cauliflower
4 cups liquid (preference is 2 cups water & 2 cups chicken broth – any combination will work)
5 cups finely chopped broccoli
1 can coconut milk (light or full fat)
2 tablespoons nutritional yeast
1 tablespoon onion powder
1 teaspoon sea salt
1 teaspoon pepper (white or black)
INSTRUCTIONS:
In a large stock pot, sauté chopped onion and minced garlic in olive oil until translucent. Add in thyme and oregano and stir to combine.
Cut cauliflower head into pieces and add to the pot.
Cover with the 4 cups of water and/or chicken broth and simmer until cauliflower is tender.
Let soup mixture cool and then pour into a blender or use an immersion blender to make a creamy consistency. Pour creamy cauliflower soup back into the pot and place on low heat.
Add broccoli, coconut milk, nutritional yeast, onion powder, sea salt, black pepper and cover with lid. Stir and keep on low heat until broccoli is tender. Adjust seasonings to taste.
