French Onion Dip
TIME: 30 MIN | YIELD: 4.5 CUPS
INGREDIENTS:
2 tablespoons olive oil
4 cups onion, diced
3 teaspoons coarse sea salt
2 teaspoons fresh thyme
2 cups Cashew Sour Cream
1 cup Vegenaise (soy-free) or Homemade Mayonnaise
1 teaspoon onion powder
1 teaspoon garlic powder
1 teaspoon ground white pepper
INSTRUCTIONS:
Warm olive oil in a sauté pan over medium-low heat and add diced onions, fresh thyme, and only 1 teaspoon sea salt.
Cook the onions until they are caramelized, about 20 minutes.
Remove from heat and set aside to cool.
Make Cashew Sour Cream and combine with Vegenaise or Homemade Mayonnaise.
Add all other ingredients and remaining 2 teaspoons of sea salt.
Refrigerate 20 minutes and adjust seasonings as desired before serving.
