Baked Stuffed Apples

TIME: 1 HR 10 MIN | YIELD: 10 SERVINGS

INGREDIENTS:

  • 10 apples

  • Juice of 1/2 lemon

  • 1 cup raw pecans

  • 1/2 cup raisins

  • 8 tablespoons ghee, butter, or coconut oil, sliced into pads

  • 2 teaspoons pumpkin pie spice

  • 1/4 teaspoon sea salt

  • 1/2 cup maple syrup

  • 1/2 cup apple juice

INSTRUCTIONS:

  1. Preheat oven to 375 degrees.

  2. Core apples, leaving about half an inch of apple intact at the bottom of the core. 

  3. Place apples upright in a baking dish and sprinkle tops with lemon juice.

  4. In a food processor combine pecans, raisins, butter, pumpkin pie spice and sea salt. Process until the ingredients are roughly chopped and mixed well. 

  5. Pour into a bowl and toss mixture with maple syrup. 

  6. Stuff the cored apples with the mixture until overflowing on the top. Pour apple juice around apples in the pan and cover. 

  7. Bake at 375 for 30-40 minutes or until apples are soft. 

  8. Serve with a dollop of Coconut Whipped Cream.
