Greek Salad Dressing

When our family needs a break in the kitchen we have a favorite Greek restaurant not far from our home that we run to for an amazing Greek salad. Not only is it covered in yummy veggies but it is served with one of the best Greek salad dressings I have ever had. I was determined to recreate this in my kitchen.

Enjoy our version of a classic Greek salad dressing that makes clean eating not only enjoyable, but nutritious! We love this dressing over a bed of spring mix with Kalamata olives, peppers, tomatoes, cucumbers, and a little red onion. It can also be used as a yummy marinade for chicken. It's so delicious, your kids (big and small) just might eat their salad and ask for more!

 Ingredients:

  • 2 cloves garlic

  • ¼ cup apple cider vinegar

  • ¼ cup red wine vinegar

  • 1 teaspoon raw honey

  • 1 teaspoon Dijon mustard

  • 1 tablespoon dried oregano

  • 2 teaspoons dried basil

  • 2 teaspoons dried thyme

  • 1 teaspoon sea salt

  • 1 teaspoon black pepper

  • Juice of ½ lemon

  • 1 cup olive oil

 INSTRUCTIONS:

Combine all ingredients except olive oil in Vitamix or high powered blender until smooth.  Slowly pour in the olive oil while blades are running on low until fully combined.  Refrigerate for 5-7 days.
