Coconut Yogurt

INGREDIENTS:

  • 4 cups coconut meat (from 3 young thai coconuts)

  • 1 cup coconut water (from the young coconuts)

  • 2 teaspoons vanilla extract

  • 1 tablespoon maple syrup

  • 1 teaspoon (6 capsules) powdered probiotic blend (optional)

ADDTIONAL MIX-INS:

INSTRUCTIONS:

  1. Make a small opening at the top of each young coconut with either a large butcher knife or machete and pour out the coconut water into a jar.

  2. Split the coconut into two halves with the butcher knife or machete. Using a firm spoon, scrape out the coconut meat into a bowl.

  3. Combine all of the ingredients into a blender and blend until smooth. The consistency should be relatively thick, similar to pudding. For a thinner yogurt continue to add more coconut water until desired consistency is reached. 

  4. You may choose to stir in a teaspoon of your desired probiotic, cover with a dish towel, and leave at room temperature for up to 6 hours or overnight if desired.

  5. Refrigerate and serve chilled or spruce up your coconut yogurt with fun toppings or mix-ins.
